You'll Go Paleo For These Delicious Cookies
The Paleo diet seems to be all virtuous, all the time, right? All those lean proteins and leafy greens are inherently healthy, yes. But what about cookies? You (we mean we) can't possibly live without them, can you?
Thanks to a few ingenius engineering feats from dedicated nutritionists, bakers and gluten-deprived paleo zealots, baking paleo-approved treats is as easy as a quick trip to the health food store for paleo-friendly ingredients: alternative flours made from almonds, coconut, and quinoa are high in protein and work wonders in the oven, creating a texture very similar to grain flour without the gluten.
Our favorite recipes stay close to tradition but swap conventional ingredients for paleo-approved ones, so we were stoked to find this incredibly delicious chocolate chunk version, which seriously tastes like a delicious cookie that just happens to be paleo. Try it once, and you may say sayonara to wheat flour for good.
Paleo Chocolate Chunk Cookies
Makes 18 cookies
2 cups / 6.3 oz / 190 gr blanched almond flour/meal
¼ teaspoon fine grain sea salt
½ teaspoon baking soda
¼ cup / 2 oz / 55 gr coconut oil, melted
2 tablespoons honey (or maple syrup)
1 tablespoon vanilla extract
¾ cup / 3.5 oz / 100 gr coarsely chopped +70% dark chocolate
