Bikini Recipe: Prot-Meal Power Bowl

With all of the excitement going on in Bubble World, I got to thinking about certain times in my life when things weren't so positive and exciting.  A time in my life where the words "I can't" were used far too frequently.  

Those times are officially over.  I'm now in an era of "I can."

      

This past week I had the opportunity to hear a lot of inspirational stories about women doing what they love, their stories of obstacle jumping and overcoming their ways to success.

It began with a panel on Tuesday at The Butterfly, "The Business of Business" with leading women in food Jessica Schupak, Lili Lynton, and Katina Pappas.  Then came the inspiring article by the ever-so-talented Julia Turshen on Vogue.com yesterday, "Why Keeping Weight Off, Not Losing It, Is the Real Victory," on a different type of success (and no, the similar last name is no coincidence!).

Last night I got to chat with the uber-athletic Robin Arzon about overcoming her recent diagnosis of Type 1 Diabetes and the adversities that came with it while teaching multiple fitness classes a day and training for a marathon.

Needless to say, my week has been filled with a lot of fabulous women who never said "I can't" but rather, said "I can."  These great sources of inspiration paired with the notes and emails I've received from my Kickstarter campaign backers, saying "I believe in what you're doing!" have fueled me to a new high.  The only "can't" now allowed in my vocabulary will be when referring to items on my food allergy list.   

      

This recipe has been fueling me as a pre-workout meal on mornings before I hit the pavement for my half marathon training.  It's just as important to properly fuel your body before a workout as it is after one.  This recipe is not only chock full of nutritious fuel, but can also be easily made in just about five minutes.  See below for my favorite brands.

 

PROT-MEAL POWER BOWL

Prep time: 5 minutes  |  Total time: 5 minutes  |  Servings: 1 power bowl

INGREDIENTS

  • 1 packet/serving instant oatmeal
  • 1 serving allergy friendly protein powder
  • 1 teaspoon Maca powder [optional]
  • pinch of cinnamon [optional]
  • ½ cup - ⅔ cup boiling water
  • ¼ cup dried figs, chopped [about 2-3]
  • 1 tablespoon dried goji berries
  • 1 tablespoon rolled oats

DIRECTIONS

Combine instant oatmeal, protein powder, Maca, and cinnamon in a bowl; add boiling water and stir until well combined.  Top with figs, goji berries, and rolled oats and enjoy hot.
